Is that some hex stock being used to form the mud ring and give plenty of Vee groove for a suitable weld?

No - it is 1/2" x 3/4" hot rolled bar with the weld prep ground off.

We finished the welding and installed the tubes today.

The boiler was tested today. Glenn pumped it up to 250 PSI at 9:30 AM. At 1:30 PM the pressure had risen to 260 PSI.
We figured that was good enough.
