What is the correct engagement for model taper pipe threads?
I have heard some were around 6 threads for the fine thread fittings. What about 5/16”-27?

For 1/16" NPT, it's going to be about 3/16" (or about 5 turns). But really you keep turning until it won't leak for your application.
It's going to vary based on pipe material, thread dope used, size, etc. The best way to get a better ballpark engagement length is to make some test pieces up with the thread dope you are going to use, assemble together and leak test (a rubber tip air nozzle works great for this).
